How do I change that? I want it to say "Red Mage FTW"

That is called a "User-Title". You need to earn it. You earn them by winning forum competitions. Some examples are Literary of the week and Literary of the month. Those are the only two I can think of right now that give them. I'm hosting LOTW, and the prize is a custom User-Title if you would like to join.

Yeah :D Go to the "Contest" section in the Literary arts to view it.
